As Grenache devotees, Julien Ditté and Oliver Cazenave pursued an original expression of the Grenache grape, anchored in their local Catalonian traditions, to produce a startlingly different rosé. This 100% Grenache Gris has been developed in opposition to the traditional aperitif style of rosé. With a surprisingly tannic structure, combining fresh nuts and candied melon, with Grenache's smoky overtones, this wine is structured to complement spicy Mediterranean and Asian cuisine.
From 60 year old vines on the Domaine Trilles (just South-West of Tresserre) that have been cultivated without herbicides, Julien has delivered a truly remarkable rosé. Keeping it simple, he has only used natural yeasts and a settling tank and avoided ageing in wood before the wine is bottled without fining or filtration.
This rosé should be served without decanting, preferably at around 12C and should be consumed the same day that the bottle is opened (never a problem in our experience). With its terrific structure and mouthfeel, this wine has the power to accompany traditional garlic and smoke-rich dishes from Catalonia, a real Caesar dressing with lots of anchovies and garlic, aubergines fried in olive oil or slow-roasted pork.
