We are lucky enough to carry both the 2010 and the 2012 vintages of this fine Vin de Pays du Var (IGP will never sound so good) from our Provençal favourite, Domaine du Deffends. Wine has been cultivated on this spot for thousands of years - the 'sesterce' refers to the find of a Roman coin dating from the reign of Vespasian amongst these vines. However, the property - more recently in the custodianship of the de Lanversin family since 1963 - has been certified Organic (Ecocert) since 2009.
The white wine that has been coaxed from the old vines of the Champ du Sesterce's south-east facing limestone soil is very fine. The 80% Vermentino (or 'Rolle'), 20% Viognier grapes are all hand-harvested and then slowly fermented (with only natural yeasts) and then 'rested' in tank before bottling without fining.
As Team Deffends says: 'Son fruité et son intensité en font un vin d’apéritif idéal. Il accompagne les plats de poisson grillé ou cuisiné, mais aussi les fromages à pâte persillée.' Absolutely.
