Pascal Fullá is a perfectionist and it is hard to see where he could improve on his top l'Écriture cuvée - of which he makes less than 500 cases. This wine has re-ordered the landscape of Languedoc-Roussilon wine-making and fulfils Pascal's ambition to make subtle, complex, rewarding wines. From vineyards around Jonquières his wines are produced in the AOP Coteaux du Languedoc - Terrasse du Larzac appellation
Made from Syrah, Grenache Noir and Mourvèdre grapes, this full-bodied wine, brimming with fruit and spice, is carefully constructed to age elegantly for 5 years or more - so all these vintages are now well aged for drinking.
Maître Fulla also recommends that his l'Écriture should be decanted for at least three hours before drinking. In our personal experience this extraordinary cuvée continues to open out for a full 24 hours from opening, so don't hurry this process. Pascal also suggests that this extraordinary wine can be enjoyed with hare, truffles and boeuf bourguignon.
